custom_height=&#8221;20&#8243;][vc_column_text]<em>Estratto da &#8220;Radio Food&#8221; 6 Aprile 2021<\/em><\/p>\n<h3>Quali parametri tenere in considerazione per\u00a0 scegliere l\u2019olio d\u2019oliva migliore?<\/h3>\n<p>Ce lo spiega Claudio Vignoli in questa intervista:<\/p>\n<p><em>\u201cPer godere di un olio di qualit\u00e0, bisogna fare una valutazione in termini \u201c<strong>oggettivi<\/strong>\u201d e \u201c<strong>soggettivi<\/strong>\u201d:<\/em><\/p>\n<p><em>Si pu\u00f2 valutare un olio di qualit\u00e0 in termini \u201coggettivi\u201d mediante un\u2019<strong>analisi chimica<\/strong>. Essa si realizza secondo una metodologia standard valida in tutto il Mondo ed \u00e8 per questo che \u00e8 oggettivamente valida.<\/em><\/p>\n<p><em>Una valutazione in termini \u201c<strong>soggettivi<\/strong>\u201d, invece, indica la\u00a0<strong>valutazione sensoriale<\/strong>\u00a0che, seppur seguendo delle regole studiate e comuni, \u00e8 basata sull\u2019utilizzo dell\u2019<strong>olfatto<\/strong>\u00a0e del\u00a0<strong>gusto<\/strong>. Proprio per questo motivo \u00e8 facile aspettarsi un\u2019 interferenza personale al fine della valutazione.<\/em><\/p>\n<p><em>Mi \u00e8 capitato molte volte di assistere a delle valutazioni sensoriali dove lo stesso olio, assaggiato e valutato da un gruppo di assaggiatori qualificati, ha avuto punteggi e valutazioni molto diverse. La categoria di olio nominata \u201cfruttato intenso\u201d, per esempio, gode di una grande quantit\u00e0 degli stessi. Per questo motivo, durante l\u2019assaggio di un olio di questo tipo, percepiremo un forte pizzicore alla gola. La quantit\u00e0 di polifenoli dipende dalla\u00a0<strong>variet\u00e0 delle olive<\/strong>\u00a0e dalla<strong>\u00a0zona di produzione<\/strong>. Ad esempio nella zona Lago di Garda e\u00a0 in Liguria, le variet\u00e0 di olive autoctone producono un olio delicato; mentre in Puglia, precisamente a Corato, spicca la Coratina, un olio conosciuto per il suo alto livello di retrogusto piccante che provoca il famoso pizzicore in gola. La Coratina \u00e8 prodotta con una variet\u00e0 di olive che gode del pi\u00f9 alto numero di polifenoli in natura.<\/em><\/p>\n<p><em>Appena la Coratina viene trasformata in olio pu\u00f2 risultare difficile da consumare, per questo motivo si fa decantare un periodo di tempo prima della consumazione.<\/em><\/p>\n<p><em>Il numero di polifenoli con il passare del tempo inizia a ridursi, anche e soprattutto per questo motivo \u00e8 fondamentale\u00a0<strong>conservare<\/strong>\u00a0al meglio il prodotto. Si consiglia di consumare l\u2019olio entro i\u00a0<strong>18 mesi<\/strong>\u00a0dall\u2019imbottigliamento e di conservarlo lontano da fonti di\u00a0<strong>calore<\/strong>\u00a0e\u00a0<strong>luce<\/strong>. L\u2019olio deve essere posizionato in un luogo\u00a0<strong>fresco<\/strong>\u00a0ed\u00a0<strong>asciutto<\/strong>, rigorosamente in una bottiglia di\u00a0<strong>vetro scuro<\/strong>.<\/em><\/p>\n<h3><em>Altro elemento distintivo di un buon olio extra vergine \u00e8 l\u2019<strong>acidit\u00e0<\/strong>: pi\u00f9 questa \u00e8 bassa pi\u00f9 la qualit\u00e0 \u00e8 elevata. Un buon olio extra vergine dovrebbe avere una acidit\u00e0 che non sia superiore allo 0,2% \u2013 0,3%.<\/em><\/h3>\n<p><em>Una bassa acidit\u00e0 deve essere abbinata ad un basso numero di\u00a0<strong>perossidi<\/strong>. Essi indicano un\u2019 alterazione di tipo ossidativo dell\u2019olio, sinonimo di degradazione ed invecchiamento.
