custom_height=&#8221;20&#8243;][vc_column_text]La resa di estrazione dell\u2019olio di oliva pu\u00f2 essere migliorata sia agendo sul tempo e sulla temperatura di gramolazione, sia con l\u2019aggiunta di coadiuvanti fisici come il talco naturale micronizzato. Quest\u2019ultima soluzione, consentita dalla normativa comunitaria, vista la sua azione esclusivamente fisica, \u00e8 ben nota per promuovere la rottura delle emulsioni olio\/acqua e di conseguenza facilitare l&#8217;estrazione dell&#8217;olio, aumentandone la resa.<\/p>\n<p>In uno studio dell\u2019Universit\u00e0 di Bari &#8211; condotto l&#8217;obiettivo di valutare l&#8217;effetto del talco sulla resa di estrazione e sulla qualit\u00e0 degli oli extravergine di oliva di Coratina dopo la produzione e durante lo stoccaggio &#8211; \u00e8 stato osservato un effetto significativo non solo sulla resa, ma anche sulla qualit\u00e0 dell&#8217;olio.
